Crispy Chicken Cutlet

Ingredients:
• Boneless Chicken Breasts
• Eggs
• Milk or Cream
• Italian Seasoned Bread
Crumbs
• Italian seasoning
• Salt
• Pepper
• Garlic Powder
• Celery salt
• Canola Oil
Directions:
1. Cut the chicken breast lengthwise into about 1-2 inch wide strips Place between plastic wrap and pound really thin. Pat dry with a towel.
2. In a frying pan, place canola oil deep enough so it will cover the chicken about 2/3 of the way. Turn on to medium to medium- high heat.
3. Make an egg and cream/milk wash in one bowl or deep dish. (Iike to use a pie plate.) In another bowl or pie plate, combine the dry ingredients. Dredge the strips through the egg/cream wash and then through the breading mix.
4. Place the strips of chicken in the hot oil and cook until nice and crispy.
5. Some of our family likes to squeeze a little lemon juice on top before serving. We like to eat these with either mashed potatoes or roasted potatoes.
