Pasta Aioli
Ingredients
• 6 cloves of garlic
• 1/2 a cup of extra virgin olive oil
• 1 lb.. of uncooked organic linguini or spaghetti
• 1/4 cup of fresh Italian parsley
• 1 cup of organic finely grated Parmigiano-Reggiano cheese
• 1/4 teaspoon red pepper flakes, or Italian herbs
• salt and freshly ground black pepper to taste.
Directions
1. Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water. Organic pasta takes a bit longer. Make sure to follow cooking instructions. Stirred occasionally until cooked through al dente. Drain and transfer to a pasta bowl.
2. On a separate skillet, cook over medium heat the garlic and the olive oil. Slowly toast garlic, about 10 minutes. Reduce heat to medium-low when oil begins to bubble and garlic looks golden brown. Reduce heat to low.
3. Add pasta and stir red pepper flakes, black pepper and salt into the pasta. Sprinkle on Italian parsley and half the Parmigiano-Reggiano cheese. Stir until all ingredients combined. Serve pasta and topped with remaining cheese.
