Sweet Potato Streusel Casserole
Ingredients:
Casserole:
• 6-8 sweet potatoes
• 1/2 c sugar
• 1 tsp salt
• 1 tsp vanilla
• 3 eggs
• 1/2 c melted butter
• 1/2 c milk
Streusel:
• 1 1/2 c brown sugar
• 1 1/2 c chopped pecans
• 1/2 c cubed butter, softened
• 1/4 sugar
• 1 tsp cinnamon
Directions:
1. Cook sweet potatoes at 425 for 55 mins.
2. Turn oven down to 375.
3. Take sweet potatoes out of oven. Remove skin from potatoes, put in mixing bowl.
4. Add remaining casserole ingredients and mix for about 4 mins until light and fluffy. Add more milk if not smooth enough.
5. Pour into casserole dish and bake for 25 mins.
6. Prepare streusel by cutting all ingredients together. After casserole cooks, sprinkle with streusel and bake for 10- 15 more mins.
